This is a super simple recipe but it always ends up so yummy...just don't overcook it!  It dries out easily.

1      (15 oz) can pure pumpkin
1      (12 oz) can evaporated milk
3/4   cup white sugar
1      teaspoon cinnamon
1/2   teaspoon salt
1/2   teaspoon nutmeg
1/2   teaspoon ginger
2      eggs
1      unbaked pastry shell

Preheat oven to 425
Mix together everything but eggs with a fork until blended.  In separate bowl, whip eggs, then add to pumpkin mixture, mix thoroughly. Pour into pastry shell.  Bake at 425 for 15 minutes. Reduce heat to 350, bake pie for an additional 40-45 minutes. 

If my pastry gets too brown on the sides, I sometimes wrap it in foil for the last 20 minutes or so.

I think the BEST pumpkin pie is from the recipe on the Libby's Pumpkin Filling can.

I think the BEST pumpkin pie is from the recipe on the Libby's Pumpkin Filling can.

You know what else?  They have a pumpkin pie mix that 's already canned and ready to add it to the pie shell to bake.  I think it's Libby's. I like to mix my own better, but I bet it's pretty good too.  Definitely a time saver :D

Thank you for the recipes, I am going to pick up the ingredients for the Pumpkin Pie and I will be making the both of them today for tomorrow.  I have to make 4 of them so I will be making 2 of each...

Just wanted to let everyone know that I am making the Pumpkin Pies...There sure do smell good.  Can't wait for dessert tonight...

I just wanted to let everyone know that I made the recipe that was posted here and the recipe that was on the can of pumpkin.  The both of them were a hit.  My family and friends loved them.

If you live in a place that does not have tinned pumpkin  what whole  pumpkin do you reccommend?   
I am not a complete idiot, some parts are missing    :)
